Storage and Preservation Best Practices
Post-harvest management includes all activities carried out after a crop is harvested until it reaches the consumer or market. These activities include cleaning, drying, sorting, grading, packaging, storage, transportation and preservation. Proper post-harvest handling helps maintain quality, reduce losses, prevent pest and disease damage and improve the farmer’s income.
1. Cleaning
Harvested produce should be cleaned immediately to remove:
Soil and dust
Stones and foreign materials
Damaged grains
Diseased fruits and vegetables
Leaves and crop residues
Cleaning improves product quality and prevents contamination during storage.
2. Drying
Proper drying is essential for grains, pulses, oilseeds and spices. Produce stored with high moisture can develop mould, bad odour, insects and fungal toxins.
Grains should be dried on clean tarpaulins, cement floors or raised drying platforms. They should not be dried directly on roads or bare soil because this may cause contamination.
The produce should be turned regularly for uniform drying. It must be protected from sudden rain, animals and birds.
3. Sorting and Grading
Sorting means separating damaged, diseased, immature or overripe produce from healthy produce.
Grading means grouping produce according to:

Uniformly graded produce receives better market prices and is easier to pack and transport.
4. Proper Packaging
Packaging protects produce from physical damage, moisture, insects and contamination.

Plastic crates for fruits and vegetables
Cardboard boxes for delicate produce
Food-grade containers for processed products

Containers should be clean, dry and strong. Overfilling should be avoided because it can crush fruits and vegetables.
5. Grain Storage
Before storage, grains should be properly dried, cleaned and cooled. The storage room must be dry, well ventilated and protected from rain.
Bags should be placed on wooden pallets rather than directly on the floor. A gap should be maintained between the bags and walls to allow inspection and air circulation.

7. Storage of Fruits and Vegetables
Fresh fruits and vegetables continue to respire after harvesting. They lose moisture and deteriorate quickly if exposed to heat.

Keeping produce in shade

Using ventilated plastic crates
Avoiding rough handling

8. Cold Storage
Cold storage slows respiration, microbial growth and ripening. It is suitable for fruits, vegetables, flowers, milk and some seeds.
However, different crops require different temperatures. Extremely low temperatures can damage tropical crops such as banana, mango and papaya. Therefore, the recommended storage temperature for each crop should be followed.

Surplus produce can be preserved to extend shelf life and increase value.
