Harvesting is the process of collecting mature crops from the field at the correct stage. Proper harvesting is important because harvesting too early reduces yield, weight and quality, while harvesting too late may cause grain shattering, fruit damage, pest attack, over-ripening and post-harvest losses. The correct harvesting time depends on crop type, maturity signs, weather conditions, market requirements and storage plans.

Identifying the Correct Harvesting Time

Farmers should not depend only on the number of days after sowing. They should observe visible maturity indicators.

Grain crops

Paddy, wheat, maize, sorghum and millets are ready for harvest when:

  • Most leaves and stems turn yellow or straw-coloured.

  • Grains become hard and fully developed.

  • Panicles or ears bend slightly.

  • Grain moisture reaches a suitable level.

  • The crop has completed physiological maturity.

Paddy is generally harvested when about 80–85% of the grains in the panicle are mature and golden yellow. Harvesting too early produces immature and lightweight grains, while delayed harvesting increases shattering and lodging losses.

Pulses and oilseeds

Green gram, black gram, chickpea, red gram, groundnut, mustard and sesame should be harvested when most pods become mature and dry.

Harvesting should preferably be carried out during dry weather. Crops harvested during rain or with high moisture are more likely to develop mould, discoloration and storage problems. Grain crops should be harvested after morning dew has dried.

Farmers should use clean and sharp tools to reduce plant and produce damage. Harvested produce should not be placed directly on wet or contaminated soil. Clean tarpaulins, baskets, crates or bags should be used.

Fruits and vegetables should be handled gently. Throwing, overfilling containers and using rough sacks can cause bruising and spoilage. Plastic crates with ventilation are generally better than tightly packed bags for delicate produce.

Post-Harvest Operations

After harvesting, crops may require:
